Traditional sweet cheese pie with “myzithra” cheese and “anthotyro” cheese of Paros


For the filling:
1kg "myzithra " cheese of Paros
1kg "anthotyro" cheese of Paros
5 eggs
½ kg sugar
For the dough:
1kg flour
1 wine glass olive oil
1 wine glass sugar
Salt & Butter



We mix all the ingredients to make the dough. We cover it and leave it for some time so that it rises. We separate the dough into four equal parts and roll out the "fillo" layers. We put the first "fillo" in the baking pan, spread some melted butter and add the second "fillo" making sure its ends stick out of the baking pan. We add the filling spreading it evenly on the "fillo" layer, cover with the remaining two layers and close the corners. Sprinkle some cinnamon. We bake in a pre heated oven at 170- 180 degrees for about 40 minutes.
