Askada Farm – Organic Fig Culture
The ASKADA farm was founded with love and respect to the figs of the special variety produced in this enchanting place in Greece, in Kymi, Evia. In recent years they have maintained an organic fig farm near the river Mela, in the village of Andronianoi, with a focus on organic farming and a commitment to offering the unique taste of these precious figs. It is the only place where these figs thrive. They produce such fruits where, combined with their standard drying process, they achieve the fine flakiness and unique taste of these precious fruits. They follow the traditional method of drying, which has been practised in Kymi for centuries.
For them the word, “Tradition” has value as long as it is governed by the fundamental principles of cooperation, co-existence and respect for nature and man. Every year, in August, a group of people become one big family that joins forces to produce the ASKADA fig. The fig of Kymi.
The care they devote to each fig, both for its production and its development, makes them proud of the final product.
Their excellent organic figs are the main ingredient for all their handmade and special products, which combine inspiration and culinary culture with a healthy lifestyle.
Dry Kymi Figs are a high quality product, among the first to be certified with a PDO label by the European Union for both the geographical area of cultivation of the trees and the unique processing procedure. The ripe figs are carefully harvested by hand and only when they are fully ripe. This is done around the end of August, and usually more than twice a day. Following the ancient tradition, they cut the small stalk with scissors. Then they cut each fig in half! This way they make sure that the fig is clean inside. The next step is to open them and leave them in the sun to dry slowly and absorb all the rays of the Mediterranean light. Just when they are completely dried, they combine two figs of the same size by pressing them together. This is how they create the ”ASKADA”, which in the local dialect means the final shape of two dried open figs squeezed together and made into a pair!
