Μelopita (Honey pie) from Sifnos
250g honey
600g anthotyro
100g sugar
6 eggs
2 tblsp flour
1 tblsp cinnamon
3 tblsp butter

First crush the anthotyro (”flowery cheese”) inside a large bowl. Then add the eggs, the sugar, the honey, the cinnamon and the lemon zest and stir all the ingredients. Then, put the mixture in an ovenware you have already smear with butter.

Bake in a well-preheated oven at 180C for about 40 minutes. Let it cool, and then pour the dish with warm honey and sprinkle it with cinnamon.
