Home made kiwi jam

500gr ripe kiwis
400gr sugar
3-4 lemon drops
Very little vanilla extract

Peel the ripe kiwis and cut into pieces. Put in a large pot and puree. Add one cup water, vanilla extract and sugar; bring to the boil. Let simmer for about 10 minutes. When it starts to foam, remove with a spoon.

Ádd the lemon drops and simmer for 5 more minutes. Store in sterilised jars.

Grape spoon sweet

1kg grapes seedless
500gr sugar
300gr water
200gr apple juice

Wash the grapes well and place on absorbent paper to dry. Put the water and sugar in a pot and let the syrup boil. At the same time, heat the apple juice and pour into the syrup when ready. Add the grapes and skim the foam. Stir with a spoon and as the grapes start to boil, remove from heat.

Pour into sterilised jars while both the sweet and jars are hot. Let cool or refrigerate.

Cheese pie of Pelion

6 store-bought phyllo sheets
250gr feta cheese
20gr kefalotyri cheese
6 eggs
A pinch of pepper
2 cups milk

Grease the baking pan and lay out two phyllo sheets. In a large bowl, stir the grated feta cheese and the kefalotyri. Pour out the mixture evenly and cover with the remaining sheets. Finally, fold the edges downwards to form a crust. In a separate bowl stir the eggs with the milk and the pepper and pour over the pie.

Place in the oven and bake at 200 C until golden brown.

Bread rolls of Larisa

1kg flour
40gr margarine
20gr salt
60gr sugar
30gr yeast
580gr cold water

In a small bowl, dissolve the yeast in water. Pour all the ingredients into a mixing bowl. Beat for 3 minutes on medium speed and 5 minutes on fast. The dough is ready when it does not stick to the sides of the bowl. Cover and let sit for 30 minutes at room temperature. Using a rolling pin spread out a phyllo sheet 2cm thick onto a baking pan and let rise for 1 hour.

Place in the oven bake at 180 C until golden brown.

Apple molasses

10 kilos apples
Boiling water

Wash and coarsely chop 10 kilos of apples removing the stems and as many seeds as possible. Put in a large pot and add water up to the middle of the pot. Boil for a long time until the apples are soft.

When cool, put in cheese cloth to drain pressing the juice into another saucepan.

The apples of Zagora are considered among the best in the world and distinguished for high quality by the European Union as a Protected Designation of Origin product (EEK 1107/96).

Eliopsomo (Olive bread ) from Pelion

The olive bread of Pelion is a type of bread with olives (without the pit) mixed in the dough giving the strong aroma and flavor of oil to the light brown loaves.

Olive bread is made with soft flour, yeast, ferment, water and olives. The olive bread of Pelion is the traditional bread of the villages of Mt. Pelion and is generally baked before other varieties of bread. Today it is mainly a ‘tourist’ product prepared in “traditional” bakeries in many villages of Pelion.

It is served warm when the aroma of oil is particularly strong.

Galotyri cheese from Epirus & Thessaly PDO

Galotyri is a soft, creamy ‘milk cheese’ which is spreadable and usually served with a spoon. It is a traditional shepherd’s cheese with a grainy texture in a thick mass without crust. The cheese, with a slightly sour, pleasant taste and aroma requires three months to mature. It is a Protected Designation of Origin product and made in the regions of Epirus and Thessaly with sheep or goat’s milk or a mixture of both.

Manouri cheese from Thessaly & Macedonia PDO

Manouri is a fresh, semi- soft cheese, which is solid and cylindrically- shaped without crust or holes.  White in color, with a rich and creamy flavor and slightly  milkly sweet taste, it is ideal for toasts, sandwiches and crepe fillings.  It is a Protected Designation of Origin product and made in Thessaly, as well as Central and Western Macedonia. Manouri is a characteristic type of thick myzithra cheese produced by heating sheep or goat whey, or a blend, and then adding sheep or goat’s milk or richer cream.

Batzos cheese PDO

Batzos cheese, a traditional shepherd’s cheese, is a semi-hard or hard white brine cheese in square pieces with holes. It has a pleasantly sour, slightly spicy and very salty taste and aged in brine for at least six months.  It is a Protected Designation of Origin product and made in Central and Western Macedonia and Thessaly with sheep’s milk (slightly skimmed), goat’s milk or a mixture of both. It is best pan-fried in a little oil as a delicious side dish.
