The Indigo Mare Hotel serves breakfast with the best ingredients and recipes of the Cretan and Greek cuisine. A typical Greek breakfast starts with herbal beverages such as “malotyra”, “diktamo”, “melissohorto”, chamomile, green tea, and there is also natural orange juice and Greek coffee. As for bread and bakery products there are various breads, barley rusks, rusks with oil, rye rusks, barley buns, and various biscuits and cakes. Home produced extra virgin olive oil and olives are among the favorites. Guests may try thyme honey, jams, dried fruits and walnuts.
The cheese selection includes feta, “myzithra” and yellow cheese, and there is yoghurt and various cold cuts. There are always fresh fruits and vegetables on the buffet. Hot dishes include “kalitsounia” with wild greens, or with “myzithra” cheese, fried eggs, and sweet “kserotigana” (fritters).

Traditional recipes from Lesvos such as “giouzlemedes” (fried cheese pies), “sfouggato”, (zucchini pie), mushroom pie, fried zucchini balls, stand out. Other dishes include various kinds of omelettes, cheese bread, savory cake, olive pie, pie with leeks among others. There are also local products such as feta cheese of Mytilene, “ladotyri” cheese, local sausages and homegrown products (olives, olive oil, fresh fruits, tomatoes, cucumbers etc). Desserts feature traditional “loukoumades” (honey dumplings), spoon sweets, syrupy “diples”, “plantzeta” (walnuts in syrup wrapped in filo pastry), apple pie, various kinds of jams, a selection of homemade cakes and cookies.

A rich breakfast is served daily at the restaurant of Hotel Ilissos. There is always a wide variety of Greek products. The Mediterranean flavours add a special touch to the morning feast. There is fresh bread from the neighborhood bakery, homemade jams, Greek halva, traditional “pasteli” (sesame-honey bar) and “koulouri” (ring sesame buns.)
There are also freshly baked homemade traditional “striftes” (twisted) pies with Greek fillings.

The hotel has a large farm with organic olive trees from which virgin olive oil and olives are produced. There are also various trees bearing a variety of fruits (citrus, fig, peach, apricot, pears, pomegranate, quince, watermelons melons etc.) The farm also boasts its own vineyard where many varieties of grapes are cultivated, used to make wine, “raki” and “moustalevria” (grape must pudding). The hotel serves fresh fruits and dried nuts as well as handmade jams made with fruits from the farm. The beverages from homegrown herbs (marjoram, “diktamo”, mint, sage, “malotira”, etc.) are recommended. The Greek breakfast offers varieties of bread, barley rusks, products with carob (cookies, breadsticks, rusks), yoghurt, cheeses (“myzithra”, feta, gruyere etc), and a wide selection of cold cuts. The savory or sweet dishes include “dakos” (rusks with tomato, feta), savory and sweet cakes, apple pie and tarts with handmade jams. Pies are made with fillings like spinach, cheese, sausage, zucchini, and there is also “sfougato” omelet with zucchinis, as well as eggs cooked in many ways. Desserts include “ryzogalo” (rice pudding), dairy creams, compotes.

The daily breakfast buffet has certain international dishes but put emphasis on traditional Greek dishes with local ingredients. There is a selection of bread, freshly baked in the local traditional bakery, jams made by the island’s women’s cooperative, a variety of spoon sweets, thyme honey of Thasos, olives, virgin olive oil as well as local goat’s milk and yoghurt. Some hot dishes served are the traditional cheese pie with virgin olive oil of Thasos and the Greek favourite sweet “Loukoumades” (honey dumplings) with thyme honey of Thasos.

The Greek breakfast at the Ilia Mare hotel contains traditional, local recipes prepared with fresh ingredients. Delicious homemade jams, spoon sweets made with fruits from the farm and home baked pies with milk and eggs from the family farm offer the most delicious and nutritious start to the day. Only virgin oil produced by the hotel owners is used in the dishes, raising the quality of taste to new levels. Also offered are “Liropita” (sweet pumpkin pie), cheese and zucchini pie, milk pie, omelettes, fruits, jams, fresh milk, coffee and herbal beverages.

The traditional buffet breakfast is based on fresh ingredients. Guests will find homemade jams, “tiganopsoma” (fritters) with organic honey, “loukoumades” (honey dumplings) with cinnamon, cheese pie, olives and olive oil, mountain tea from Taygetos and eggs from a local supplier. Desserts include cream-filled “bougatsa” pie, “melomakarona” and “kourabiedes” (traditional Christmas sweets), spoon sweets made with traditional recipes, fresh juice, “lalaggia” (local sweet), “ryzogalo” (rice pudding), semolina pudding (halva), orange cookies and many other delicacies.

The Greek breakfast at the Ikion Eco is prepared with attention to every little detail. There is freshly squeezed orange juice and homemade lemonade as well as all kinds of coffee and beverages. Guests will also find village style or whole wheat bread, homemade organic jams, homemade cake, apple pie, “tiganites” (pancakes with honey and dried nuts), cheese pie and pie with greens with handmade phyllo, milk pie with fresh milk, and spoon sweets with fruits from the trees of the garden. The local eggs are served boiled, fried or omelettes. There is also fresh milk or strained yoghurt from Thessaly, fruit salad “ryzogalo” (rice pudding) with fresh goat’s milk.

Breakfast at the Ikaros Beach Resort & Spa includes 44 local and Greek items. There is fresh orange juice, eggs with “stakovoutyro” butter, “sfouggato” omelet with tomato and zucchini, “sarikopitakia” pies, “apaki” smoked pork and eggs with “syglino” (smoked pork). Guests will also find local fruits, traditional desserts (“kalitsounia”, “anevata”, “kserotigana”), carob honey, six types of olives, four kinds of rusks, tomato or olive jam, “glystrida” and “stamnagathi” greens. There are also four types of handmade bread, baked on the premises, Greek salad, Cretan gruyere, “ksinomyzithra” and “anthotyro” cheeses, sardines, smoked herring, and four kinds of aromatic olive oil. Finally, there is honey, “tahini” (sesame paste), “loukoumi” and “pasteli” (honey and sesame bar) and to conclude, Greek coffee brewed the traditional way.

A selection of cold cuts such as smoked pancetta, sausages in vinegar and “loutza” with onion accompany the various dishes. Guests will find olives from various regions of Greece such as green olives from Chalkidiki, “kalamon” olives and “throubes” olives.

The Cretan Breakfast holds a place of honor in a specially designated area of the buffet. There is fresh bread from the bakery, crunchy vanilla and grape must cookies, barley and wheat “dakos” rusks (paired with fresh organic tomato, fresh “myzithra” cheese and organic olive oil.)
There are also local smoked cold cuts, yoghurt paired with homemade jams and fresh fruits, as well as dried fruits and nuts. Drinks and beverages feature homemade lemonade, tasty aromatic herbal beverages such as sage, “diktamo”, marjoram, mountain tea, “eronta”, all served with local thyme honey and fresh lemon.

Hydrama Grand Hotel serves a sumptuous traditional breakfast which includes, among others, traditional breads, fresh fruits, as well as dairy products (milk, yoghurt, butter) from the local dairy industry.  Honey, tahini (sesame paste), homemade  sweets, local jams. Eggs are cooked in many ways and there are also “tiganites” (pancakes) and loukoumades” (honey dumplings). An extensive variety of Greek cold cuts and local cheeses “kasseri”, feta, “arseniko” from Naxos, gruyere from Crete, gruyere with oregano, “mikrasiatiko” with spicy peppers. Handmade pies such as cheese pies, spinach pies and mushroom pies. Additionally, virgin olive oil from Crete, olives and fresh vegetables. Beverages include Greek and other coffees, black and green tea as well as mountain tea.
